Vanilla and Chocolate Cupcakes!!!

What's up folks....

Today, I made cupcakes, and I thought it would be fun to share. So without further talking, I'll get right into the recipe. Also, I want to add that I didn't make this recipe up myself, I got it from cupcakerecipes.com.

Chocolate cupcakes

Vanilla Cupcakes

Vanilla Cupcake Ingredient:                                                            

• 2 cups all purpose flour
• 1 1/2 cups sugar
• 3 teaspoons baking powder
• 1/2 teaspoon salt
• 4 egg whites from large eggs
• 1/2 cup shortening
• 1 cup 2% milk
• 2 large eggs
• 1 1/2 teaspoon vanilla


Chocolate Cupcake Ingredient:

 2 cups all purpose flour
• 2 cups sugar
• 1/2 teaspoon baking powder
• 1 teaspoon salt
• 1 teaspoon baking soda
• 1/2 cup shortening
• 3/4 cup water
• 2 large eggs
• 3/4 cup milk
• 1 teaspoon vanilla
• 4 ounces melted unsweetened  baking chocolate


Directions: (For both chocolate and vanilla cupcake)
  1. Preheat oven to 350 degrees.  Line cupcake pans with paper liners.
  2. Combine flour, sugar, baking powder, salt, shortening, milk and vanilla  in a large mixing bowl.  Mix at low speed for 2 minutes.  Scrape bowl.  Add egg whites and mix at high speed until fluffy and smooth, approximately 2 minutes.
  3. Fill liners 1/2 to 2/3 full of batter.  Do not overfill.  Bake 20 to 25 minutes or until toothpick inserted in centre comes out clean.
  4. Cool 10 minutes in pans then remove from pan, and place on wire racks to cool completely.
  5. Frost and decorate your vanilla cupcakes as desired.


Fresh out the oven.
The icing was made from scratch, the sprinkles were store bought.
 Vanilla Icing Ingredients:

2 cups powdered (icing) sugar

2 tablespoons butter or margarine, softened
tablespoons milk
1/2 teaspoon vanilla


Directions:


Combine ingredients in a small bowl and mix with a wooden spoon or electrical mixer until smooth and fluffy.

(If you want chocolate icing, you can add 1 tablespoon of cocoa to the other ingredients.)
