Vegetarian Patties

What's up folks....

Happy Labour Day..I hope you guys are enjoying the holiday. In the spirit of the holiday, I figured I'd come on here and share a really quick, easy and tasty recipe. I don't know the name of it (I got it from my older brother), but for now, I'll call it Vegetarian patties. While making this, I forgot to record the accurate measuring, so if you ever try this, just go with your instincts like I did. I promise to record the measurements next time!!! *eek* lol.

Ingredients:  
                                                                        
Dough                                                                       
-All purpose flour
-Butter or vegetable oil (and/or shortening)      
-table salt
-cold water      

Filling
-Fresh or frozen corn
-Fresh or frozen green peas
-Fresh thyme minced
-finely diced or minced garlic (optional)
-cayenne pepper/ salt/ any spice you wish to add for taste
-carrots finely diced
-onions, green peppers, red peppers finely diced
-diced tomatoes
-vegetarian ground beef (or meat of choice) (optional)
-cooking oil

Materials Needed:
-Large skillet
-Large mixing spoon
-Rolling Pin
-Cutting Board or Table
-Large bowl
-Deep frying pan

Directions: 
For the dough, combine all the ingredients in a large bowl and begin kneading until you get a consistent feel..(not too moist, not too dry). After you get the desired feel, let the dough rest for a while. (Use this time to make the filling).

For the filling, take large skillet and heat the oil (about a tablespoon of oil). Sauté the diced garlic, onions, sweet pepper, red and green peppers, carrot. Add corn, peas, thyme, cayenne pepper, salt, spices of choice, tomatoes and meat of choice.Combine all the ingredients well. Cover the skillet and simmer for about 10 to 15 minutes, stirring occasionally. Let the liquids absorb then remove skillet from stove. *Filling should be moist but not watery*


Take some flour and spread on working area surface, then cut medium pieces of dough and use rolling pin to spread on working area surface. When dough is nice and flat to your liking, take some filling and place in the centre of dough. Moisten the edges of the dough with water and fold the dough circle over the filling. Pinch the edges closed with a fork.

Heat a good amount of cooking oil in a deep frying pan, when oil is hot, add patties in pan and leave it until it is golden brown. Let cool, then ENJOY! Yummy!!



Fry until golden.
